We’re now progressing to higher batch numbers in our products. It’s an exciting time when you produce 'batch 1' of anything. I’ve been reflecting on the whole concept of batches and the evolution of products lately. So this seems like a good time to share some thoughts and also reach out for your feedback.

Neither of our stills is designed to produce a "neutral" spirit. Really we have the opposite...ours are designed to create an aromatic spirit, while rectifying to a high degree...
This was one of my first images from the space we would develop into Waterpocket Distillery®. It was an empty room. All we had done was indicate the layout of some items with tape...
Cocktail Recipes
When it comes to a Spanish Gin and Tonic, it’s all about the garnish. And good news, Temple of the Moon Gin is the perfect gin for almost any garnish (or every garnish!). Whether you want to bring out the juniper, coriander or fennel -- adding your favorite citrus, herbs, or spices to a Waterpocket gin and tonic is easy and incredibly delicious.
This is an amazingly refreshing summer cocktail -- and super easy! The Minthe is used in place of tequila and it makes for a wonderful, light, bright summer sipper. The subtle hint of strawberry brings a lovely sweetness that pulls this cocktail together
This is a simple punch that is perfect for your next holiday gathering. The amazing depth of the Temple of the Moon Gin is perfect for simple recipes because the flavor profile is so robust. The dry champagne and grapefruit add a dryness while the brown simple sugar provides just a hint of sweet. And of course, who doesn’t love bubbles? This is an easy sipper, but won’t leave your guests feeling too tipsy.
This cocktail is inspired by a cognac cocktail called the Thin Pink Line from bartender Sean Fennelly at Milk and Honey in London. However, in my riff called the Holiday Harvest Sour, the peach whiskey and brown sugar syrup gives it a really nice holiday flare and a little more depth, while still being light and incredibly drinkable. The egg white and Orgeat (locally made by Ryan Manning’s company Bardaddy) leave you with an extremely soft of velvety cocktail with just enough fruit in the profile to keep it light. The Holiday Harvest Sour is a frothy dream and really showcases the amazing flavor of the peach whiskey.
This cocktail is an easy sipper, inspired by a traditional bourbon lemonade. The Pennellen works so great with this flavor profile because it is a lighter amaro that works well with multiple types of spirits to create balance and cut through sourness. The inherent citrus notes in the Pennellen marries super well with this drink in particular! One of the most important aspects of this cocktail is using fresh ingredients to keep the flavor profile balanced and consistent. Using fresh citrus rather than a pre-made lemonade makes all the difference! Rinsing the glass with absinthe before pouring the cocktail adds a great aroma and adds a nice finish to the complexity of the cocktail. Adding multiple citrus juices creates more depth to the cocktail as well.
Mezcal, the smokier cousin to tequila, mixed with Utah local, Waterpocket Distillery’s pre-Prohibition herbal spirit Long Lost™ Oread, is a creative take on a summer classic.
A warming cocktail which exploits the harmony between Robbers Roost Light Whiskey and the richly aromatic Notom amaro. A great warming fall treat.
This rum punch brings together lemon, orange, honey, cinnamon, cream sherry, red wine, and Waterpocket Rum. It is super easy to make, but with ingredients like sherry and cinnamon, this punch is a little more interesting and balanced than your basic rum punch. I love the classic flavors of the citrus, but the sherry, lemon, and honey really pull this punch together. Topped with bubbles, it’s a perfect cocktail for pre-batching and serving to a large group.
This holiday cocktail is great year round - but perfect for a cold day. The Snow Angel Kummel is so soft and well-rounded, that I wanted to add other flavors that would keep that softness front and center. The spiced cider adds some sweetness, and the honey simple syrup keep the flavors balanced. The port float really pulls this cocktail together add depth and a dry finish.
The Majestic cocktail brings together Waterpocket’s spectacular cocoa and rum with tart cherry and fresh orange, creating a super balanced flavor profile that is much more earthy and savory than sweet. With cedar bitters and a holiday simple syrup created with cranberry and pomegranate, this cocktail is perfect to pre-batch and serve at any holiday party––before, or after a meal. Garnished with fresh thyme, the earthy aroma of chocolate and orange is an experience alone. This is a unique cocktail, sure to get your party guests talking.
A classic rich sour accented with the warming citrus and spice of our Toadstool Pennellen Amaro No. 2
Our Pennellen Amaro No. 2 paired with the rich flavors of curaçao and orgeat and rum take this savory beauty into a higher realm. Bold and refreshing.
Easy to make, and delicious to drink…here’s a refresher with the pep of Minthe paired with St. Germain and tart citrus.
